Panda Management Company, Inc. (PMC), based in Southern California, has grown dynamically ever since 1983 when it opened its first Panda Express, its most successful operation. As that name suggests, Panda Express units are fast-service Chinese restaurants, now found in over 34 states, the District of Columbia, Puerto Rico, and Japan. Altogether, PMC manages over 300 Panda Express Restaurants, six Panda Inn Restaurants, eight Hibachi-San Restaurants, and seven Panda Panda locations. Panda Inns, the first of which opened in 1973, are all located in Southern California, as are the Panda Pandas, upscale, gourmet Chinese food restaurants. The Hibachi-San Restaurants, featuring Japanese cuisine, are located in shopping mall food courts, about half of which are at select sites outside California. The much more ubiquitous Panda Express Restaurants are located in five basic operating environments: mall food courts; supermarkets and retail chains; shopping centers and key intersections; university and college campuses; and airports, casinos, and sports arenas.




Big Bowl Sichuan Green Beans

Big Bowl Restaurant Recipe

1 1/2 pounds fresh string beans
3/4 teaspoon salt
1 teaspoon sugar
1 tablespoon rice wine
1 teaspoon white or rice wine vinegar
1 1/2 cups peanut or vegetable oil
6 ounces ground pork
3-6 dried chile peppers, coarsely chopped
2 teaspoons dark soy sauce

Wash the beans, cut off the tips of both ends, dry thoroughly, and set aside.

Mix the salt, sugar, wine, and vinegar, and set aside.

Heat the oil in a wok or skillet until very hot. Add the beans in two batches and cook until wrinkled, 3 minutes or more depending on the freshness of the beans. Remove with a slotted spoon to drain in a colander or on paper towel and set aside.

Pour off all but 2 tablespoons of the oil. Heat and add the ground pork and dried peppers. Stir over high heat, breaking up the lumps of pork, 2 to 3 minutes. (The pork shouldn't be browned.) Add the soy sauce and stir until evenly coated.

Replace the beans and stir over high heat. Immediately add the salt, sugar and wine mixture and stir over high heat again briefly, about 1 minute. Makes 4 servings.
